Ingredients

  • 1 lb ground beef (or turkey for a lighter option)
  • 1 cup cooked rice (white or brown)
  • 1 can (15 oz) black beans, drained and rinsed adds depth
  • 1 cup corn kernels (frozen is just fine)
  • 1 packet taco seasoning for that spice
  • 2 cups shredded cheese the more, the merrier
  • 1 can (28 oz) diced tomatoes with green chilies the spicier, the better
  • 1 cup sour cream to cool things down
  • Tortilla chips or mini tacos for serving
  • Black olives for garnish think vampire eyes!

Method
 

Cooking
  1. In a large skillet over medium heat, cook the ground beef (or turkey) until it turns golden brown. Drain any excess fat, and sprinkle taco seasoning.
  2. Stir in the cooked rice, black beans, corn, and diced tomatoes (juice and all). Let the mixture bubble for about 5-7 minutes.
  3. Once warmed through, sprinkle half the shredded cheese into the skillet and stir until it melts.
  4. Transfer the mixture to a serving dish or individual mini taco bowls.
  5. Top with the remaining cheese and broil for 2-3 minutes until golden.
  6. Finish with dollops of sour cream and sprinkle black olives on top. Serve with tortilla chips or mini tacos.

Notes

Mix and match ingredients based on family tastes. Add diced jalapeƱos or hot sauce for heat. You can prepare everything a day before; just bake before guests arrive.
