Preparation
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the chopped spinach, ricotta cheese, Parmesan cheese, breadcrumbs, eggs, salt, pepper, and the optional nutmeg. Stir until everything is well combined.
- Shape the mixture into small balls or mounds—about the size of a golf ball.
- Lightly grease a baking sheet or line it with parchment paper. Place the bites on the sheet, giving them space to breathe.
Baking
- Bake for about 20-25 minutes or until golden brown.
Serving
- Let them cool slightly before serving. They can be enjoyed on their own or with marinara sauce.
Notes
Frozen spinach can be used, but ensure it is well-drained. For a different flavor, feel free to swap in mozzarella or feta cheese. Mixing should not be rushed to let the flavors combine properly.
