Ingredients
  

For the crust
  • 1 cup sesame seeds (toasted)
  • 1 cup breadcrumbs
  • 1/4 cup melted butter
  • 1/4 teaspoon salt
For the filling
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cups fresh spinach, chopped
  • 4 large eggs
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup prosciutto, chopped
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, combine the toasted sesame seeds, breadcrumbs, melted butter, and salt. Mix until it resembles wet sand. Press this mixture into a greased 9-inch pie pan.
  3. Bake the crust for about 10 minutes until golden brown, then let it cool.
  4. In a skillet over medium heat, warm the olive oil. Add the chopped onion and sauté until translucent, about 5 minutes.
  5. Toss in the spinach and cook until wilted, about 2-3 minutes. Season with salt and pepper.
  6. In a large bowl, whisk together the eggs, heavy cream, and Parmesan cheese. Add the sautéed spinach and onion mixture, followed by the chopped prosciutto. Mix well.
  7. Pour the filling into your pre-baked sesame crust.
  8. Bake in the oven for 30-35 minutes until the quiche is set and lightly golden on top.
  9. Let the quiche cool for a few minutes before slicing.

Notes

Make this quiche ahead of time and store it in the fridge before baking. You can also substitute spinach with other greens and vary the types of meats or cheeses used.
