Ingredients

  • 1 pound ground beef (or ground turkey for a lighter option) Can substitute with ground turkey.
  • 1 cup mozzarella cheese, cubed The star of the show!
  • 1 egg 1 egg To bind the mixture together.
  • 1/4 cup grated Parmesan cheese Adds flavor to the meatballs.
Vegetables and Seasonings
  • 1 cup fresh spinach, chopped Nutrient-rich ingredient.
  • 2 cloves garlic, minced Adds a wonderful flavor.
  • 1 teaspoon Italian seasoning For added flavor.

Method
 

Preparation
  1. Chop the spinach and mince the garlic.
  2. In a large mixing bowl, combine ground beef, chopped spinach, bread crumbs, Parmesan cheese, garlic, egg, Italian seasoning, salt, and pepper.
Forming Meatballs
  1. Take a small handful of the meat mixture, flatten it out in your palm, place a cube of mozzarella in the center, and mold the meat around the cheese to form a round ball.
Cooking
  1. In a large skillet, heat olive oil over medium heat and add the meatballs. Cook until browned on all sides and cooked through (about 10-12 minutes).
  2. Add marinara sauce to the skillet and simmer for an additional 5-7 minutes.
Serving
  1. Plate and serve with extra Parmesan or fresh basil. Enjoy with crusty bread on the side.

Notes

Feel free to sneak in more veggies like zucchini or bell peppers. You can also make these meatballs ahead of time and freeze them.
