Ingredients
  

For the Meatballs
  • 1 lb ground beef (or turkey, if you’re feeling healthy!)
  • 2 cups fresh spinach, chopped
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs make it gluten-free if needed!
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • to taste salt and pepper
For the Filling
  • 4 oz mozzarella cheese, cut into small cubes
For Cooking
  • Olive oil for frying (or your favorite cooking oil)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the ground beef (or turkey), chopped spinach, minced garlic, breadcrumbs, Parmesan cheese, egg, salt, and pepper. Mix with your hands until everything is well blended.
  3. Take a handful of the meat mixture, flatten it in your palm, place a cube of mozzarella in the center, and fold the meat around the cheese to roll it into a ball. Repeat until all mixture is used.
Cooking
  1. Heat a large skillet over medium heat and add a bit of olive oil. Once hot, add the meatballs, making sure not to overcrowd the pan. Sear them for about 5 minutes, turning occasionally until golden brown.
  2. Transfer the seared meatballs to a baking dish and bake in the preheated oven for about 15-20 minutes, until cooked through and the cheese is gooey inside.
  3. Serve hot, straight from the oven, with a side of pasta or a simple salad.

Notes

Feel free to experiment with different cheeses! Freezing cooked meatballs is a great way to save time on busy weeknights.
