Ingredients
  

For the Quiche
  • 1 pre-made pie crust 1 pre-made pie crust Using a pre-made crust saves time.
  • 3 large 3 large eggs
  • 1 cup 1 cup fresh spinach, chopped
  • 1/2 cup 1/2 cup feta cheese, crumbled
  • 1/4 cup 1/4 cup dried cranberries
  • 1/4 cup 1/4 cup pine nuts, toasted Pine nuts should be toasted for best flavor.
  • 1 cup 1 cup milk Can substitute with a plant-based alternative.
  • to taste Salt and pepper to taste
  • a pinch a pinch of nutmeg Optional, but adds a cozy flavor.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Place the pre-made pie crust in a 9-inch pie dish, pressing it firmly against the edges.
Mixing
  1. In a large mixing bowl, whisk together the eggs and milk until well combined. Add salt, pepper, and nutmeg.
  2. Stir in the chopped spinach, crumbled feta, dried cranberries, and toasted pine nuts until evenly mixed.
Baking
  1. Pour the mixture into your prepared pie crust, spreading it evenly. Bake for 30-35 minutes, or until the quiche is set and the top is golden brown.
  2. Once done, let it cool for about 10 minutes before slicing.
Serving
  1. Serve the quiche warm, at room temperature, or cold as a snack with a side salad.

Notes

For a gourmet upgrade, brush the pie crust with melted butter and sprinkle herbs before adding the filling. This quiche can be made ahead of time and stored for up to 3 days in the fridge.
