Preparation
  1. Wash the cucumbers and slice them thinly, peeling if desired.
  2. In a small bowl, whisk together the sesame oil, rice vinegar, soy sauce, honey (or maple syrup), and chili garlic sauce until fully blended.
  3. Toss the cucumber slices with the dressing in a large mixing bowl, ensuring they are well-coated.
  4. Sprinkle sesame seeds on top, add salt and pepper to taste, and include optional garnishes if desired.
  5. Let the salad chill in the fridge for 15-30 minutes to enhance flavors.

Notes

For best results, let the salad marinate in the fridge. Feel free to experiment by adding other vegetables like bell peppers or carrots. Leftovers can be stored in an airtight container in the fridge for up to two days.
