  • 3 tablespoons gochujang (Korean chili paste) Adjust heat to taste.
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
Main Ingredients
  • 1 pound boneless chicken thighs Cut into bite-sized pieces.
  • 1 cup shredded mozzarella cheese
  • 2 green onions sliced (for garnish)
  • 2 cups cooked rice For serving.

Preparation
  1. In a mixing bowl, combine the gochujang, soy sauce, honey, sesame oil, minced garlic, and ginger. Stir until everything is beautifully blended.
  2. Cut the chicken thighs into bite-sized pieces and add them to the bowl with your marinade. Toss well to ensure every piece is coated. Cover the bowl and let it sit for at least 30 minutes.
Cooking
  1. In a skillet over medium heat, add the marinated chicken. Cook for about 8-10 minutes, or until the chicken is cooked through and starts to caramelize slightly.
  2. Sprinkle the shredded mozzarella cheese over the top. Cover the skillet with a lid and let it cook for another 3-5 minutes until the cheese is melted.
Serving
  1. Serve your spicy Korean cheesy chicken over a bed of steaming hot rice and garnish with sliced green onions.
