- Cut the chicken thighs into bite-sized pieces and add them to the bowl with your marinade. Toss well to ensure every piece is coated. Cover the bowl and let it sit for at least 30 minutes.
Cooking
- In a skillet over medium heat, add the marinated chicken. Cook for about 8-10 minutes, or until the chicken is cooked through and starts to caramelize slightly.
- Sprinkle the shredded mozzarella cheese over the top. Cover the skillet with a lid and let it cook for another 3-5 minutes until the cheese is melted.
