Ingredients
  

For the Cornbread
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar Optional to add more for sweetness
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup buttermilk Can substitute with homemade buttermilk
  • 1/4 cup unsalted butter, melted Butter makes everything better
  • 2 large eggs
  • 1 cup diced jalapeños Use fresh or pickled based on spice preference
For the Drizzle
  • 1/4 cup honey
  • 1 each lime, juice

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) to prepare for baking.
  2. In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, mix the buttermilk, melted butter, and eggs until well combined.
Making the Cornbread
  1. Pour the wet ingredients into the dry ingredients, stirring gently until just combined.
  2. Fold in the diced jalapeños without overmixing.
  3. Pour the batter into a greased baking pan (or a cast iron skillet).
  4. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
Drizzle Preparation
  1. While the cornbread is baking, mix the honey and lime juice in a small bowl.
  2. Once the cornbread is baked, let it cool slightly then slice it.
  3. Drizzle the sweet lime honey over the cornbread before serving.

Notes

Consider adding shredded cheese or corn kernels to enhance the flavor. Make sure ingredients are at room temperature for a fluffier texture.
