Ingredients
  

For the Chicken
  • 1 pound boneless, skinless chicken thighs Can also use chicken breasts, shrimp, or tofu.
  • 1/4 cup honey
  • 2 tablespoons fresh ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon sriracha Add more for extra heat.
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
For Serving
  • 2 cups cooked rice (jasmine, brown, or your choice)
  • 1 cup steamed broccoli or your favorite veggies
  • 1 each avocado, sliced Optional, but highly recommended.
For the Yum Yum Sauce
  • 1/2 cup mayonnaise
  • 1 tablespoon ketchup
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • A pinch of garlic powder

Method
 

Marinate the Chicken
  1. In a bowl, whisk together honey, ginger, soy sauce, sriracha, minced garlic, salt, and pepper.
  2. Add the chicken thighs, ensuring they get a good coat of that sweet and spicy goodness.
  3. Marinate for at least 30 minutes.
Cook the Chicken
  1. Heat a skillet over medium-high heat and add a splash of oil.
  2. Add the chicken and cook each side for about 6-7 minutes or until browned and cooked through.
Make the Yum Yum Sauce
  1. While the chicken is cooking, blend mayonnaise, ketchup, rice vinegar, sugar, and garlic powder in a bowl.
  2. Stir until smooth.
Assemble Your Bowls
  1. Start with a bed of rice, add the cooked chicken, steamed broccoli (or your veggie of choice), and sliced avocado.
Drizzle with Yum Yum Sauce
  1. Generously drizzle the Yum Yum Sauce over everything.

Notes

Marinate chicken in the morning for convenience. This dish is perfect for meal prep; store chicken and rice separately.
