- In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat.
- Season chicken pieces with salt and pepper. Add them to the pan and stir-fry for about 5-7 minutes or until golden brown and cooked through.
- Add mixed vegetables and stir-fry alongside the chicken for another 3-4 minutes until slightly tender but still crunchy.
- Add minced garlic and sauté for an additional minute until fragrant.
- In a small bowl, whisk together soy sauce, sriracha, and honey. Pour over the chicken and vegetables, allowing to simmer for a couple of minutes until sauce thickens slightly.
- Serve the stir-fry over divided cooked rice. Top with sliced green onions and sesame seeds if desired.
Notes
For a quick meal, prep all ingredients beforehand. You can substitute chicken with shrimp, tofu, or beef. Store leftovers in an airtight container in the fridge for up to three days.
