Spicy Garlic Chicken Stir-Fry with Rice

Ingredients
  

Main Ingredients
  • 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
  • 2 cups mixed vegetables (bell peppers, broccoli, snap peas) Feel free to customize with whatever you have on hand.
  • 3 tablespoons vegetable oil For stir-frying
  • 4 cloves garlic, minced Adjust based on garlic preference.
  • 2 tablespoons soy sauce
  • 1 tablespoon sriracha Add more for extra spice!
  • 1 tablespoon honey Balances the heat from sriracha.
  • 2 cups cooked rice Can use white, brown or cauliflower rice.
  • Salt and pepper, to taste
  • Optional toppings: sliced green onions and sesame seeds For added flavor.

Method
 

Cooking Instructions
  1. In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat.
  2. Season chicken pieces with salt and pepper. Add them to the pan and stir-fry for about 5-7 minutes or until golden brown and cooked through.
  3. Add mixed vegetables and stir-fry alongside the chicken for another 3-4 minutes until slightly tender but still crunchy.
  4. Add minced garlic and sauté for an additional minute until fragrant.
  5. In a small bowl, whisk together soy sauce, sriracha, and honey. Pour over the chicken and vegetables, allowing to simmer for a couple of minutes until sauce thickens slightly.
  6. Serve the stir-fry over divided cooked rice. Top with sliced green onions and sesame seeds if desired.

Notes

For a quick meal, prep all ingredients beforehand. You can substitute chicken with shrimp, tofu, or beef. Store leftovers in an airtight container in the fridge for up to three days.
