Method
 

Melt the Cheeses
  1. In a medium saucepan, add cubed Velveeta cheese and milk. Cook over medium heat, stirring occasionally until melted and creamy.
Stir in Those Spices
  1. Once the cheese is melted, add the canned diced tomatoes and green chilies, along with chili powder, cumin, garlic powder, and a pinch of salt. Stir to combine.
Bring it All Together

Notes

If your queso gets lumpy, just keep stirring to smooth it out. You can add black beans or corn for a vegetarian version. This dip is make-ahead friendly; just reheat with a splash of milk if it thickens.
