- In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and cook for about 5 minutes until soft and fragrant.

- Add the ground cumin, coriander, and smoked paprika to the pot. Stir until fragrant.
- Add the diced sweet potatoes and dry lentils. Give everything a good mix.
- Pour in the vegetable broth. Bring to a gentle boil, then reduce to a simmer. Cover and let simmer for 25-30 minutes, or until the sweet potatoes are tender and the lentils are cooked.
- Blend a portion of the soup with an immersion blender for a creamy texture, if desired.
- Season with salt and pepper to taste. Serve with a squeeze of lemon juice or a dollop of yogurt on top, if desired.
