  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.5 teaspoon smoked paprika
  • 4 cups vegetable broth (or chicken)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Optional: a squeeze of lemon juice or a dollop of yogurt for serving

Cooking Instructions
  1. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and cook for about 5 minutes until soft and fragrant.
  2. Toss in the minced garlic and stir for another minute.
  3. Add the ground cumin, coriander, and smoked paprika to the pot. Stir until fragrant.
  4. Add the diced sweet potatoes and dry lentils. Give everything a good mix.
  5. Pour in the vegetable broth. Bring to a gentle boil, then reduce to a simmer. Cover and let simmer for 25-30 minutes, or until the sweet potatoes are tender and the lentils are cooked.
  6. Blend a portion of the soup with an immersion blender for a creamy texture, if desired.
  7. Season with salt and pepper to taste. Serve with a squeeze of lemon juice or a dollop of yogurt on top, if desired.
