- In a large mixing bowl, toss the diced sweet potatoes with olive oil, cumin, smoked paprika, cinnamon, salt, and pepper. Ensure they’re well-coated.
- Arrange the sweet potato mixture in a single layer on a baking sheet lined with parchment paper.
Roasting
- Pop the baking sheet in your preheated oven and roast for about 25 minutes, stirring halfway through, until golden brown.
- Remove the sweet potatoes from the oven and quickly sprinkle the crumbled feta on top to soften slightly.
- Drizzle the roasted sweet potatoes with honey.
- Finish with fresh parsley or cilantro if desired, and serve warm.
Notes
Substitute feta with shredded cheese like cheddar if preferred. Leftover sweet potatoes are great in wraps, salads, or breakfast hash.
