Ingredients
  

For the bread
  • 3 pieces ripe bananas, mashed The browner, the better!
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
For the topping
  • 1 tablespoon cinnamon
  • 1/4 cup sugar

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
  2. In a large bowl, mix together the melted butter and mashed bananas.
  3. Add the baking soda and salt, stirring in gently.
  4. Incorporate the sugar, beaten egg, and vanilla extract, blending well.
  5. Gradually add in the flour, mixing until just combined.
  6. Pour the batter into the prepared pan. In a small bowl, mix the remaining 1/4 cup sugar with the cinnamon and sprinkle over the batter.
Baking
  1. Bake for 60-65 minutes until a toothpick inserted in the center comes out clean.
  2. Let cool in the pan for about 10 minutes before transferring to a wire rack.

Notes

For added texture, you can include chopped nuts or chocolate chips. If you're short on time, microwave the ripe bananas until soft for about 30 seconds. Don't worry if the outside looks a little dark; it adds character!
