Ingredients
  

For the Pancakes
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 spray cooking spray For greasing the pan
For the Smash Burgers
  • 1 pound ground beef (80/20) For the juiciest burgers
  • Salt and pepper To taste
  • Cheese slices (American or cheddar) Choose your favorite

Preparation
  1. In a large bowl, mix the flour, sugar, baking powder, and salt.
  2. In a separate bowl, whisk together the milk, egg, and melted butter.
  3. Combine the wet and dry ingredients until just mixed, leaving lumps in the batter.
Cooking the Pancakes
  1. Heat a griddle or frying pan over medium heat and lightly coat it with cooking spray.
  2. Pour about 1/4 cup of batter for each pancake and cook until bubbles form on the surface.
  3. Flip and cook until golden brown, about 2-3 minutes on each side.
  4. Repeat until all the batter is used and place the pancakes on a warm plate.
Forming the Burgers
  1. While pancakes rest, shape the ground beef into patties (about 2 oz each) and season with salt and pepper.
Cooking the Burgers
  1. On a hot skillet, place the burger patties and smash them down with a spatula.
  2. Cook for about 2-3 minutes on each side, adding cheese slices on top during the last minute.
Assembly
  1. Take a pancake, layer it with a burger patty, cheese included, and finish with another pancake on top.
  2. Serve with maple syrup or favorite toppings, such as bacon.

Notes

For extra fluffy pancakes, let the batter sit for a few minutes before cooking. Serve with maple syrup and powdered sugar, or whipped cream for a treat!
