Method
Preparation
- In a large bowl, mix the flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together the milk, egg, and melted butter.
- Combine the wet and dry ingredients until just mixed, leaving lumps in the batter.
Cooking the Pancakes
- Heat a griddle or frying pan over medium heat and lightly coat it with cooking spray.
- Pour about 1/4 cup of batter for each pancake and cook until bubbles form on the surface.
- Flip and cook until golden brown, about 2-3 minutes on each side.
- Repeat until all the batter is used and place the pancakes on a warm plate.
Forming the Burgers
- While pancakes rest, shape the ground beef into patties (about 2 oz each) and season with salt and pepper.
Cooking the Burgers
- On a hot skillet, place the burger patties and smash them down with a spatula.
- Cook for about 2-3 minutes on each side, adding cheese slices on top during the last minute.
Assembly
- Take a pancake, layer it with a burger patty, cheese included, and finish with another pancake on top.
- Serve with maple syrup or favorite toppings, such as bacon.
Notes
For extra fluffy pancakes, let the batter sit for a few minutes before cooking. Serve with maple syrup and powdered sugar, or whipped cream for a treat!
