Ingredients
  

Main Ingredients
  • 4 pieces boneless, skinless chicken breasts
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots) Feel free to use whatever looks good!
  • 1/2 cup honey
  • 1/4 cup soy sauce
  • 4 cloves garlic, minced Or 1 teaspoon of garlic powder
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Green onions and sesame seeds for garnish Optional

Method
 

Preparation
  1. Rinse chicken breasts and pat dry.
  2. Chop mixed vegetables into bite-sized pieces.
Sauce Preparation
  1. Whisk together honey, soy sauce, minced garlic, and sesame oil in a small bowl.
Slow Cooker Assembly
  1. Place chicken breasts at the bottom of the slow cooker.
  2. Add mixed vegetables on top.
  3. Pour the honey garlic sauce over everything.
Cooking
  1. Cover and set the slow cooker on low for 6-7 hours or high for 3-4 hours.
Serving
  1. Once cooked, shred the chicken with a fork and mix everything together.
  2. Adjust seasoning with salt and pepper as needed.
  3. Serve chicken and veggies on plates, garnished with green onions and sesame seeds.

Notes

You can use frozen veggies straight from the freezer. Add red pepper flakes for spice if desired. The sauce might look lumpy at first, but it will mix well during cooking.
