Ingredients
  

Main Ingredients
  • 3-4 pounds boneless chuck roast
  • 1 cup gochujang (Korean chili paste)
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 1 tablespoon sesame oil
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1 onion, chopped
  • 1 cup beef broth
  • 2 cups vegetables of your choice (carrots, potatoes, bell peppers)
  • Salt and pepper to taste
  • Green onions and sesame seeds for garnish (optional)

Method
 

Preparation
  1. Pat the chuck roast dry with a paper towel, then season generously with salt and pepper.
  2. In a skillet over medium-high heat, add a splash of oil and sear the roast on all sides until browned.
  3. In a bowl, whisk together the gochujang, soy sauce, honey, sesame oil, garlic, and ginger until smooth.
  4. In your slow cooker, layer the chopped onions and veggies first. Place the seared beef roast on top and pour the gochujang mixture over it. Add beef broth.
Cooking
  1. Cover your slow cooker and cook on low for 8 hours or on high for 4-5 hours.
  2. Once the cooking time is up, shred the beef with two forks, stir, and serve over rice, noodles, or in tacos.

Notes

For an extra kick, add more gochujang or red pepper flakes. You can use any veggies you have on hand. The sauce may look lumpy, which is normal.
