  • 3-4 lbs beef roast (chuck or brisket)
  • to taste salt and pepper
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup cranberries (fresh or frozen)
  • ½ cup balsamic glaze (store-bought or homemade)
  • 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
  • 1 tablespoon fresh rosemary (or 1 teaspoon dried rosemary)

Method
 

Preparation
  1. Season the beef roast with salt and pepper all over.
Searing
  1. Heat olive oil in a large oven-safe pot or Dutch oven over medium-high heat.
  2. Add the seasoned beef roast and sear for about 4-5 minutes on each side until golden-brown.
Sautéing Aromatics
  1. Remove the roast and add diced onion to the pot, sautéing for 3-4 minutes until soft.
  2. Add minced garlic and cook for another minute.
Combining Ingredients
  1. Pour in beef broth, cranberries, balsamic glaze, thyme, and rosemary.
  2. Stir well and return the roast to the pot.
  3. Bring to a simmer.
Slow-Braising
  1. Cover the pot with a lid or foil and transfer to a 300°F oven.
  2. Let it braise for 3-4 hours until fork-tender.
Serving
  1. Remove from oven, let rest, slice, and drizzle with the glaze.
  2. Serve with mashed potatoes or crusty bread.

Notes

Searing the beef is crucial for depth of flavor. If the glaze is too thick, add a bit of water or broth to loosen it. Leftover roast makes amazing sandwiches!
