Preparation
- Season the beef roast with salt and pepper all over.
Searing
- Heat olive oil in a large oven-safe pot or Dutch oven over medium-high heat.
- Add the seasoned beef roast and sear for about 4-5 minutes on each side until golden-brown.
Sautéing Aromatics
- Remove the roast and add diced onion to the pot, sautéing for 3-4 minutes until soft.
- Add minced garlic and cook for another minute.
Combining Ingredients
- Pour in beef broth, cranberries, balsamic glaze, thyme, and rosemary.
- Stir well and return the roast to the pot.
- Bring to a simmer.
Slow-Braising
- Cover the pot with a lid or foil and transfer to a 300°F oven.
- Let it braise for 3-4 hours until fork-tender.
Serving
- Remove from oven, let rest, slice, and drizzle with the glaze.
- Serve with mashed potatoes or crusty bread.
Notes
Searing the beef is crucial for depth of flavor. If the glaze is too thick, add a bit of water or broth to loosen it. Leftover roast makes amazing sandwiches!
