  • 1 pound sea scallops

  • 2 tablespoons olive oil For searing the scallops
For the zesty lime cilantro sauce
  • 1/4 cup fresh lime juice About 2-3 limes
  • 1/4 cup finely chopped fresh cilantro Aromatic and flavorful
  • 1 tablespoon honey For a hint of sweetness

Preparation
  1. Rinse your scallops under cold water, pat them dry with paper towels, and season with salt and pepper.
Cooking the scallops
  1. In a large skillet, heat olive oil over medium-high heat until shimmering.
  2. Carefully place scallops in the pan, ensuring they aren't overcrowded.
  3. Cook scallops for about 2-3 minutes on one side until golden brown, then flip and cook for an additional 2 minutes until opaque.
Making the sauce
  1. In a small bowl, mix together lime juice, cilantro, honey, minced garlic, salt, and pepper.
  2. Taste and adjust sweetness and tang as needed.
Serving
  1. Drizzle the zesty lime cilantro sauce over the cooked scallops and garnish with additional cilantro if desired.

Notes

Don’t rush the sear! A good sear adds loads of flavor. Serve over quinoa or alongside a simple salad for a wholesome meal.
