- In a bowl, combine your shrimp with olive oil, garlic powder, cumin, chili powder, salt, and pepper. Mix well until the shrimp are fully coated. Let them marinate for about 15 minutes.
- In a skillet over medium-high heat, cook the shrimp for about 2-3 minutes per side until they’re pink and opaque. Remove them from heat and set aside.
- In a bowl, combine the diced mango, red onion, bell pepper, jalapeño, lime juice, and cilantro for the salsa. Mix and let the flavors mingle.
- In another bowl, whisk together Greek yogurt or sour cream, lime juice, cilantro, and a pinch of salt for the cilantro sauce.
- Warm your tortillas in a skillet or microwave. Layer the shrimp first, then spoon on the mango salsa, and drizzle with the creamy cilantro sauce. Top with avocado and extra cilantro.

- Serve the shrimp tacos immediately with napkins, as they can get messy!
Notes
Don’t worry if your sauce looks a little lumpy—it’s all part of the magic! For extra spice, toss in some extra jalapeño or a dash of hot sauce. Leftover shrimp can be used in a salad or mixed into pasta.
