Ingredients
  

For the Shrimp
  • 1 pound medium shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • to taste salt and pepper
For the Mango Salsa
  • 1 ripe mango, diced Try not to eat it all before it hits the salsa!
  • 1/2 red onion, finely chopped
  • 1/2 red bell pepper, diced
  • 1 jalapeño, seeded and minced (optional) For a kick!
  • 1 tablespoon lime juice
  • to taste fresh cilantro, chopped Because cilantro makes everything better!
For the Creamy Cilantro Sauce
  • 1/2 cup Greek yogurt or sour cream
  • 1 tablespoon lime juice
  • to taste fresh cilantro, chopped Yes, more cilantro!
  • to taste salt
Taco Fixings
  • as needed corn or flour tortillas Because nobody can resist a good taco shell!
  • as needed sliced avocado If you’re feeling fancy.
  • as needed additional cilantro for garnish

Method
 

Preparation
  1. In a bowl, combine your shrimp with olive oil, garlic powder, cumin, chili powder, salt, and pepper. Mix well until the shrimp are fully coated. Let them marinate for about 15 minutes.
  2. In a skillet over medium-high heat, cook the shrimp for about 2-3 minutes per side until they’re pink and opaque. Remove them from heat and set aside.
  3. In a bowl, combine the diced mango, red onion, bell pepper, jalapeño, lime juice, and cilantro for the salsa. Mix and let the flavors mingle.
  4. In another bowl, whisk together Greek yogurt or sour cream, lime juice, cilantro, and a pinch of salt for the cilantro sauce.
  5. Warm your tortillas in a skillet or microwave. Layer the shrimp first, then spoon on the mango salsa, and drizzle with the creamy cilantro sauce. Top with avocado and extra cilantro.
Serving
  1. Serve the shrimp tacos immediately with napkins, as they can get messy!

Notes

Don’t worry if your sauce looks a little lumpy—it’s all part of the magic! For extra spice, toss in some extra jalapeño or a dash of hot sauce. Leftover shrimp can be used in a salad or mixed into pasta.
