Ingredients

For the Tacos
  • 1 pound shrimp, peeled and deveined or grill them in their shells
  • 1 tablespoon olive oil
  • to taste Salt and pepper
  • 1 teaspoon chili powder because taco seasoning would be too mainstream
  • 2 cups purple cabbage, shredded
  • 1 unit avocado, sliced the creaminess makes everything better
  • Feta cheese, crumbled for that salty kick
  • Corn or flour tortillas don’t worry, we won’t take sides
For the Creamy Cilantro-Lime Sauce
  • ½ cup Greek yogurt or sour cream—no judgment here
  • 1 unit lime, juiced the zest brings the joy
  • ¼ cup fresh cilantro, chopped the fresher, the better
  • to taste Salt

Method

Preparation
  1. In a mixing bowl, toss the shrimp with olive oil, salt, pepper, and chili powder until they’re evenly coated. Let them marinate for about 10 minutes.
  2. Heat a skillet over medium-high heat. Once sizzling, add the shrimp in a single layer. Cook them for about 2-3 minutes per side until they turn pink and opaque. Remove from heat.
Make the Sauce
  1. In a small bowl, whisk together the Greek yogurt, lime juice, chopped cilantro, and salt. Adjust seasoning to taste.
Assemble Your Tacos
  1. Warm your tortillas in the skillet for about 30 seconds on each side.
  2. Load each tortilla with shrimp, followed by shredded cabbage, sliced avocado, crumbled feta, and a drizzle of your creamy sauce.
  3. Devour immediately, adding any additional toppings you desire.

Notes

Don't overcook the shrimp to avoid a rubbery texture. Leftover sauce can be stored in an airtight container and used on salads or grilled veggies. You can substitute shrimp with grilled chicken or black beans for a vegetarian version.
