Preparation
- In a mixing bowl, toss the shrimp with olive oil, salt, pepper, and chili powder until they’re evenly coated. Let them marinate for about 10 minutes.
- Heat a skillet over medium-high heat. Once sizzling, add the shrimp in a single layer. Cook them for about 2-3 minutes per side until they turn pink and opaque. Remove from heat.
Make the Sauce
- In a small bowl, whisk together the Greek yogurt, lime juice, chopped cilantro, and salt. Adjust seasoning to taste.
Assemble Your Tacos
- Warm your tortillas in the skillet for about 30 seconds on each side.
- Load each tortilla with shrimp, followed by shredded cabbage, sliced avocado, crumbled feta, and a drizzle of your creamy sauce.
- Devour immediately, adding any additional toppings you desire.
Notes
Don't overcook the shrimp to avoid a rubbery texture. Leftover sauce can be stored in an airtight container and used on salads or grilled veggies. You can substitute shrimp with grilled chicken or black beans for a vegetarian version.
