  • 10 oz Tortilla chips About 10 oz
  • 1 lb Shrimp, peeled and deveined
  • 1 lb Andouille sausage, sliced
  • 2 cups Shredded cheese A mix of cheddar and Monterey Jack works well
  • 2 tablespoons Olive oil
  • 2 cloves Garlic, minced
  • 2 Green onions, chopped
  • 1-2 Jalapeños, sliced Optional for those who like it spicy
  • Cilantro, for garnish
  • Sour cream, for serving

Method
 

Preparation
  1. Gather all your ingredients for a clean cooking space.
Cooking
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the sliced sausage and cook for about 4-5 minutes until golden and sizzling.
  3. Add the minced garlic and shrimp. Cook for another 3-4 minutes until shrimp turn pink.
  4. On a large baking sheet, spread the tortilla chips in an even layer.
  5. Generously add the shrimp and sausage mixture on top of the chips.
  6. Sprinkle shredded cheese all over.
  7. Pop the baking sheet in a preheated oven at 350°F (175°C) for about 10-15 minutes, or until cheese is melting and bubbly.
Serving
  1. Once out of the oven, sprinkle with chopped green onions and fresh cilantro.
  2. Add jalapeños for an extra kick if desired.
  3. Serve with sour cream on the side.

Notes

You can prepare the shrimp and sausage mixture ahead of time and store it in the fridge before adding to the chips and cheese.
