Ingredients
  

Fajita Filling
  • 1 pound shrimp, peeled and deveined Fresh or frozen shrimp can be used.
  • 1 pound crab meat Fresh or canned works great!
  • 2 pieces bell peppers, thinly sliced Mix colors for a rainbow effect.
  • 1 medium onion, sliced
  • 2 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • Flour or corn tortillas Your choice!
  • Fresh lime To squeeze over the top.
  • Optional toppings: sour cream, guacamole, fresh cilantro, or salsa Customize to your taste.

Method
 

Preparation
  1. In a large skillet, heat the olive oil over medium heat. Toss in the sliced onions and bell peppers. Sauté until they start to soften, about 3-5 minutes.
  2. Add the shrimp and crab to the skillet, sprinkle with chili powder, garlic powder, salt, and pepper. Cook until the shrimp turns pink and opaque, about 5-7 minutes.
  3. While the filling is cooking, heat your tortillas in a separate pan or wrap them in foil and pop them in the oven for a few minutes.
  4. Take a tortilla, pile on the shrimp and crab mixture, drizzle fresh lime juice over the top, and add your favorite toppings.

Notes

You can substitute shrimp or crab for other proteins like chicken, steak, or tofu. If you enjoy heat, add jalapeños or cayenne pepper to the filling. Leftovers can be stored in an airtight container in the fridge for up to 2 days.
