Preparation
- Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking sheet.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In another bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet mixture, alternating with the milk, and mix until just combined.
- If desired, fold in chocolate chips or berries.
- Pour the batter into the prepared baking sheet and smooth the top.
Baking
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Finishing Touches
- Once cooled, dust with powdered sugar or frost it with your favorite icing.
Notes
Eggs can be substituted with a quarter-cup of unsweetened applesauce. For a fun flavor twist, try adding lemon or almond extract instead of vanilla. Leftover cake can be stored wrapped in plastic wrap in the fridge for up to a week.
