Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking sheet.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet mixture, alternating with the milk, and mix until just combined.
  5. If desired, fold in chocolate chips or berries.
  6. Pour the batter into the prepared baking sheet and smooth the top.
Baking
  1. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Finishing Touches
  1. Once cooled, dust with powdered sugar or frost it with your favorite icing.

Notes

Eggs can be substituted with a quarter-cup of unsweetened applesauce. For a fun flavor twist, try adding lemon or almond extract instead of vanilla. Leftover cake can be stored wrapped in plastic wrap in the fridge for up to a week.
