  • 1 pound fresh scallops Look for plump, sweet beauties at your seafood counter.
  • 1 tablespoon olive oil
  • 4 tablespoons unsalted butter Because butter makes everything better!
  • 4 cloves garlic, minced Or more if you’re feeling adventurous.
  • ½ cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley or chives, chopped for garnish Optional, but adds a nice pop of color.

Method
 

Cooking Instructions
  1. Pat the scallops dry with a paper towel to ensure a beautiful golden sear.
  2. Season the scallops generously with salt and pepper on both sides.
  3. In a large skillet, heat the olive oil over medium-high heat until shimmering.
  4. Carefully place the scallops in the hot skillet and sear for about 2-3 minutes on one side until golden brown. Flip and cook for an additional 2-3 minutes.
  5. Remove the scallops and set aside. In the same skillet, add the butter and let it melt.
  6. Add the minced garlic and sauté for about 30 seconds until fragrant.
  7. Slowly pour in the heavy cream, stirring until well combined. Season with salt, pepper, and optional nutmeg.
  8. Return the scallops to the skillet and coat them in the creamy sauce, cooking for an additional minute to warm through.
  9. Garnish with freshly chopped parsley or chives and serve.

Notes

Cooking Tips: Avoid crowding the pan for optimal sear, don't overcook the scallops, and feel free to experiment with the cream or add a splash of lemon juice for extra zing.
