  • 1 pound shrimp, peeled and deveined
  • 1 pound baby potatoes, halved
  • 2 ears corn, cut into thirds
  • 1/2 pound smoked sausage, sliced
  • 4 cloves garlic, minced
  • 1 tablespoon Old Bay seasoning A spice blend for seafood
  • 1 count lemon, sliced
  • 4 tablespoons butter, melted Makes the dish richer in flavor

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the halved baby potatoes, corn, and sausage.
  3. Add the minced garlic, Old Bay seasoning, salt, and pepper to the veggie mix. Drizzle with melted butter.
  4. Tear off four large pieces of aluminum foil (about 12×18 inches) and divide the veggie and sausage mixture evenly among the pieces.
  5. Top each mound of vegetables with a generous amount of shrimp and a slice of lemon.
  6. Fold each piece of aluminum foil over to create packets, ensuring they are tightly sealed.
Cooking
  1. Place the packets on a baking sheet and bake for about 20-25 minutes until the shrimp is pink and everything is heated through.
  2. Carefully open each packet, being cautious of the steam, and serve immediately.

Notes

Mix and match the ingredients to suit your taste. Feel free to add vegetables like bell peppers or zucchini. Leftovers can be stored in an airtight container for up to two days and reheated gently.
