  • 2 links or patties sausage links or patties Feel free to use turkey or vegetarian sausage.
  • 2 slices slices of your favorite bread Sourdough or whole grain are great options.

Method
 

Cooking the Sausage
  1. Start by heating a skillet over medium heat. Add your sausage and cook for about 6-8 minutes, turning frequently until they’re brown and fully cooked.
Toasting the Bread
  1. While the sausage is cooking, pop the slices of bread in the toaster. For extra flavor, you can toast the bread in the skillet after the sausage is cooked.
Scrambling the Eggs
  1. Crack the eggs into a bowl and whisk them well. Season with salt and pepper, then pour them into a clean skillet over medium-low heat. Stir gently with a spatula for about 3-5 minutes until they’re just slightly runny.
Plating the Dish
  1. Grab a plate and layer on your sausage, scrambled eggs, and toast. Optionally add a slice of avocado or fresh herbs.

Notes

For creamier eggs, whisk in a tablespoon of cream or milk. You can also add spinach or tomatoes to the eggs for a twist. Store leftovers in an airtight container in the refrigerator for up to two days.
