  • 1 cup heavy cream Can be substituted with half-and-half for a lighter option.
  • 1 cup mixed mushrooms, sliced Use shiitake and cremini for depth of flavor.
  • 1 clove garlic, minced
  • 1/2 cup grated Parmesan cheese Reserve some for topping.
  • 2 tablespoons unsalted butter For sautéing and topping.
  • Salt and pepper, to taste Adjust seasoning as needed.
  • Chopped parsley for garnish Optional but adds freshness.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, melt 1 tablespoon of butter, then add the sliced mushrooms and garlic. Sauté until golden, about 5-7 minutes.
  3. In a mixing bowl, combine the heavy cream, 1/4 cup of Parmesan cheese, salt, and pepper; whisk together.
Assembly
  1. Layer the sautéed mushrooms in a baking dish and place the fresh scallops on top.
  2. Pour the creamy mixture over the scallops to ensure they are well covered.
  3. Sprinkle the remaining Parmesan cheese on top and dot with the remaining tablespoon of butter.
Cooking
  1. Bake in the preheated oven for 20-25 minutes, or until scallops are cooked through and the top is golden brown.
  2. Garnish with chopped parsley before serving.

Notes

You can assemble the dish ahead of time and bake it just before serving. Variations include adding spinach or substituting the mushrooms with other vegetables.
