Ingredients

Jalapeño Peppers
  • 10-12 pieces fresh jalapeños (medium-sized) Adjust heat level by choosing milder peppers if desired.
Cheese Mixture
  • 8 oz cream cheese (softened) Can substitute with spicy cheese spread or goat cheese.
  • 1 cup shredded cheddar cheese Use different cheese blends for variety.
  • 1/2 cup cooked and crumbled bacon Optional, but highly recommended for flavor.
  • 1/4 cup green onions (chopped)
Spices
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika For an extra kick.

Method

Preparation
  1. Preheat your oven to 375°F (190°C). Cut the jalapeños in half lengthwise and scoop out the seeds and membranes, wearing gloves if necessary.
Mix Filling
  1. In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, crumbled bacon, chopped green onions, garlic powder, salt, pepper, and smoked paprika. Mix until well combined.
Stuff Jalapeños
  1. Fill each jalapeño half with the creamy mixture generously.
Bake
  1. Place the stuffed jalapeños on a baking sheet lined with parchment paper. Bake for about 20-25 minutes, until the tops are golden and bubbly.
Serve
  1. Let them cool for a few minutes before serving. Best served warm, but also tasty at room temperature.

Notes

Make these ahead of time by stuffing the jalapeños and refrigerating them until ready to bake. You can freeze them before baking for up to a month. Bake from frozen, adding extra time as needed.
