  • 1 pound corned beef, chopped
  • 14 oz sauerkraut, drained and rinsed
  • 1 cup Swiss cheese, shredded Add more for extra cheesiness!
  • 1 cup Thousand Island dressing
  • 8 slices rye bread, cut into cubes
  • 1/2 teaspoon caraway seeds Optional, but recommended!
  • 1 tablespoon olive oil
  • to taste Fresh parsley for garnishing If desired

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the chopped corned beef, sauerkraut, shredded Swiss cheese, and Thousand Island dressing. If using, add the caraway seeds and mix well.
  3. Cut the rye bread into bite-sized cubes. In a separate bowl, drizzle the olive oil over the bread cubes and toss to coat.
  4. In a greased 9x13-inch baking dish, layer half of the bread cubes, then half of the beef mixture. Repeat with remaining bread cubes and beef mixture.
Baking
  1. Cover the dish with aluminum foil and bake for about 30 minutes.
  2. Remove the foil and bake for an additional 15 minutes until the cheese is melted and bubbly.
Serving
  1. Let the dish sit for a few minutes before serving. Garnish with freshly chopped parsley if desired.

Notes

Try adding sautéed onions or peppers for extra flavor. The dish can be stored in an airtight container in the fridge for up to 3 days.
