Ingredients

Main Ingredients
  • 2 cups fresh or frozen peas
  • 3 cups assorted greens (spinach, kale, or Swiss chard)
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 0.5 teaspoon freshly cracked black pepper
  • 0.5 cup grated Pecorino Romano cheese Can substitute with Parmesan if necessary.
  • to taste salt

Method

Cooking Instructions
  1. In a large skillet, heat the olive oil over medium heat. Toss in your assorted greens and sauté them for about 3-5 minutes, or until they become tender and slightly wilted.
  2. Add the peas to the skillet and gently mix them in. Cook for another 2-3 minutes until they're heated through.
  3. Drizzle in the fresh lemon juice, sprinkle with salt, and give it a hearty dose of black pepper. Adjust seasonings based on your preferences.
  4. Remove the pan from heat and immediately sprinkle the Pecorino Romano cheese over your mixture. Toss until everything is coated in cheesy goodness.
  5. Serve this delightful dish warm, alongside grilled chicken or just on its own, garnished with additional cheese and pepper if desired.

Notes

Consider adding minced garlic during the sautéing process for extra flavor. If your dressing looks lumpy, that's just the cheese getting cozy with the greens. Got leftovers? Toss them into your morning omelet or blend them into a soup.
