Preparation
- In a skillet, melt the butter over medium heat. Add the chopped onions and garlic, cooking until soft and fragrant—about 2-3 minutes.
- Add the finely chopped mushrooms, sprinkling with salt and pepper. Sauté for about 5-7 minutes until the mushrooms are tender.
- Remove the mushroom blend from heat and let it cool slightly. Stir in the shredded cheese until melted and combined.
Assembly
- On a lightly floured surface, roll out the puff pastry and spread the mushroom and cheese mixture evenly over it.
- Roll the pastry tightly into a log and slice into 1-inch thick pinwheels.
- Place the pinwheels on a baking sheet lined with parchment paper and brush each with the beaten egg.
Baking
- Preheat your oven to 400°F (200°C) and bake for 15-20 minutes or until puffed and golden brown.
- Let them cool for a few minutes and serve warm.
Notes
Feel free to add fresh herbs like thyme or parsley to the filling. If you don't have puff pastry, tortillas can also work. If the pinwheels look a bit rustic, just call it 'rustic charm.'
