  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 tablespoon salt
  • 1/2 teaspoon pepper
Wet Ingredients
  • 3 large eggs
  • 1 cup whole milk
  • 1/2 cup olive oil
Main Ingredients
  • 1 cup caramelized onions (about 2 large onions, sliced and cooked until golden)
  • 1 1/2 cups diced turkey bacon (cooked until crispy)

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and pepper.
  3. In another bowl, whisk together the eggs, milk, and olive oil until smooth.
  4. Slowly pour the wet ingredients into the dry mixture, stirring gently until just combined.
  5. Gently fold in the caramelized onions and crispy turkey bacon.
  6. Pour the mixture into a greased 9x5 inch loaf pan (or mini pans) and bake for 40-45 minutes.
  7. Once baked, let it cool for a few minutes before slicing.

Notes

Leftover cake can be stored in the fridge for up to 3 days. Reheat in the oven. For added flavor, consider mixing in fresh herbs like thyme or rosemary.
