Savory Beef Lo Mein with Vegetables

Ingredients
  

Noodles and Beef
  • 8 ounces lo mein noodles (or any noodle you prefer)
  • 8 ounces beef (flank steak or sirloin, thinly sliced)
Vegetables
  • 1 cup broccoli florets
  • 1 each bell pepper (sliced) any color you fancy
  • 1 medium carrot (julienned)
  • 3 cloves garlic (minced)
  • 1 teaspoon fresh ginger (minced)
Sauces and Oils
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil (for cooking)
Garnishes
  • green onions (optional, for garnish)
  • sesame seeds (optional, for garnish)

Method
 

Cooking Noodles
  1. Begin by boiling your lo mein noodles according to package instructions. They should be al dente—no mushy noodles here! Drain and rinse them under cold water.
Sautéing Vegetables
  1. In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add broccoli, bell pepper, and carrots. Stir-fry for about 3-5 minutes until just tender but still a bit crisp. Remove from skillet and set aside.
Cooking Beef
  1. In the same skillet, add remaining oil and the sliced beef. Stir-fry for about 3-4 minutes, or until browned and cooked through. Toss in garlic and ginger.
Combining Ingredients
  1. Return the veggies to the skillet with the beef. Pour in soy sauce and oyster sauce, and toss until everything is coated. Add lo mein noodles and sesame oil, and stir-fry another couple of minutes until heated through.
Serving
  1. Remove from heat, plate it up, and garnish with green onions and sesame seeds. Enjoy!

Notes

For ultra-tender beef, slice against the grain. Feel free to substitute with chicken, shrimp, or tofu. If you prefer it saucier, add a splash of broth or water.
