Cooking Steps
- In a large skillet over medium heat, add a splash of oil and toss in your chopped sausage. Cook it until it’s perfectly browned, about 5-7 minutes.
- Next, throw in the chopped onions and minced garlic. Sauté until the onions turn translucent, stirring occasionally.
- Stir in the grated ginger and green chilies, and cook for another two minutes until fragrant.
- Toss in the diced tomatoes along with a pinch of salt and pepper. Let the mixture simmer on low heat for about 10 minutes.
- Once your sauce has thickened slightly and the tomatoes have broken down, taste and adjust seasoning as needed. Sprinkle with fresh cilantro.
Notes
Substitutions: Chicken sausage or tofu can work. Store leftovers in an airtight container for up to three days in the fridge or freeze.
