  • 1 pound smoked sausage such as andouille or kielbasa
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 ripe tomatoes, diced or a can of diced tomatoes
  • 1 tablespoon fresh ginger, grated
  • 1-2 green chilies, chopped adjust for spice
  • Salt and pepper to taste
  • Fresh cilantro for garnish adds visual appeal

Cooking Steps
  1. In a large skillet over medium heat, add a splash of oil and toss in your chopped sausage. Cook it until it’s perfectly browned, about 5-7 minutes.
  2. Next, throw in the chopped onions and minced garlic. Sauté until the onions turn translucent, stirring occasionally.
  3. Stir in the grated ginger and green chilies, and cook for another two minutes until fragrant.
  4. Toss in the diced tomatoes along with a pinch of salt and pepper. Let the mixture simmer on low heat for about 10 minutes.
  5. Once your sauce has thickened slightly and the tomatoes have broken down, taste and adjust seasoning as needed. Sprinkle with fresh cilantro.

Notes

Substitutions: Chicken sausage or tofu can work. Store leftovers in an airtight container for up to three days in the fridge or freeze.
