  • 1 cup water You can substitute with milk for a richer flavor.
For the sausage
  • 1 pound breakfast sausage Choose mild or spicy based on your preference.
Additional ingredients
  • 1 tablespoon maple syrup Optional, for serving.
  • Cooking spray or oil For greasing the pan.

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, cook the sausage until browned and fully cooked through, about 7-10 minutes. Break it into small, bite-sized pieces and drain any excess grease.
  3. In a large bowl, combine the pancake mix and water (or milk) until just combined.
  4. Gently fold the cooked sausage into the batter.
  5. Grease a muffin tin with cooking spray or oil. Pour in the batter, filling each cup about halfway.
Baking
  1. Place the muffin tin in the preheated oven and bake for 15-20 minutes, or until the tops spring back when gently pressed.
Serving
  1. Allow the bites to cool in the pan for a few minutes before removing. Serve warm with maple syrup or your favorite dipping sauce.

Notes

You can prepare the batter the night before and store it in the refrigerator. These bites can be frozen; reheat in the oven or microwave when ready to eat. For picky eaters, consider sneaking in finely chopped veggies.
