Cooking Steps
- In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat. Add the Italian sausage, breaking it apart with a spoon. Cook until browned and cooked through, about 5-7 minutes.
- Toss in the diced onion and minced garlic. Sauté for 3-4 minutes until the onion is translucent.
- Add the diced sweet potatoes to the pot. Stir and let them absorb flavorful juices for a couple of minutes.
- Pour in the chicken broth and bring everything to a boil. Lower the heat and simmer for about 10 minutes until the sweet potatoes are tender.
- Stir in the cheese tortellini and continue simmering for another 5-7 minutes, until cooked.
- Add the fresh spinach along with the Italian seasoning, salt, and pepper. Stir until the spinach wilts and your soup is ready.
Notes
Add cannellini beans or kale for a heartier soup. For a smoother consistency, blend with an immersion blender. Leftovers reheat best with a splash of broth.
