  • 1 pound Italian sausage Can be sweet or spicy.
  • 1 large sweet potato, peeled and diced Adds sweetness.
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 8 cups chicken broth Can substitute with vegetable broth for a veggie version.
  • 1 package cheese tortellini Fresh or frozen.
  • 4 cups fresh spinach Don’t skimp on this.
  • 1 teaspoon Italian seasoning Adds flavor.
  • Salt and pepper to taste
  • Olive oil For cooking.

Method
 

Cooking Steps
  1. In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat. Add the Italian sausage, breaking it apart with a spoon. Cook until browned and cooked through, about 5-7 minutes.
  2. Toss in the diced onion and minced garlic. Sauté for 3-4 minutes until the onion is translucent.
  3. Add the diced sweet potatoes to the pot. Stir and let them absorb flavorful juices for a couple of minutes.
  4. Pour in the chicken broth and bring everything to a boil. Lower the heat and simmer for about 10 minutes until the sweet potatoes are tender.
  5. Stir in the cheese tortellini and continue simmering for another 5-7 minutes, until cooked.
  6. Add the fresh spinach along with the Italian seasoning, salt, and pepper. Stir until the spinach wilts and your soup is ready.

Notes

Add cannellini beans or kale for a heartier soup. For a smoother consistency, blend with an immersion blender. Leftovers reheat best with a splash of broth.
