Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the melted butter and sugar. Whisk until smooth.
- Add in the eggs one at a time, whisking well after each addition, then mix in the vanilla extract.
- In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt, then gradually mix this into the wet ingredients until just combined.
- Fold in the chocolate chips.
- Using a cookie scoop or tablespoon, drop spoonfuls of the dough onto the prepared baking sheet, leaving space between each cookie.
- Sprinkle sea salt on top of each cookie before baking.
- Bake for 10-12 minutes, until the edges are set but the centers still look soft.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
Don’t overmix! Fold the dry ingredients until combined to avoid tough cookies. Feel free to add nuts or white chocolate chips for variation. You can chill the dough for up to two days, let it warm for 10 minutes before baking.
