  • 1 packet active dry yeast (2 ¼ tsp)
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 cup warm water (about 110°F)
  • 1 cup grated Parmesan cheese
  • 2 tablespoons fresh rosemary, chopped (or 1 tablespoon dried)
  • 2 tablespoons olive oil (plus more for the bowl)

Preparation
  1. In a small bowl, combine the warm water, sugar, and yeast. Allow it to sit for about 5-10 minutes until it’s foamy.
  2. In a large mixing bowl, whisk together the flour and salt. Then, add the Parmesan cheese and rosemary, stirring until combined.
  3. Pour the yeast mixture into the flour mixture. Add the olive oil, and mix until a sticky dough forms.
  4. Turn the dough out onto a floured surface. Knead for about 5 minutes, or until it’s smooth and elastic.
  5. Place the dough in a greased bowl, cover it with a kitchen towel, and let it rise in a warm place for 1-2 hours or until it doubles in size.
Baking
  1. About 30 minutes before you’re ready to bake, preheat your oven to 375°F.
  2. Once risen, gently punch the dough down and shape it into a rustic loaf. Place it on a lined baking sheet and let it rest for another 15 minutes.
  3. Bake for 25-30 minutes, or until golden brown and it sounds hollow when tapped.
