Preparation
- In a small bowl, combine the warm water, sugar, and yeast. Allow it to sit for about 5-10 minutes until it’s foamy.
- In a large mixing bowl, whisk together the flour and salt. Then, add the Parmesan cheese and rosemary, stirring until combined.
- Pour the yeast mixture into the flour mixture. Add the olive oil, and mix until a sticky dough forms.
- Turn the dough out onto a floured surface. Knead for about 5 minutes, or until it’s smooth and elastic.
- Place the dough in a greased bowl, cover it with a kitchen towel, and let it rise in a warm place for 1-2 hours or until it doubles in size.
Baking
- About 30 minutes before you’re ready to bake, preheat your oven to 375°F.
- Once risen, gently punch the dough down and shape it into a rustic loaf. Place it on a lined baking sheet and let it rest for another 15 minutes.
- Bake for 25-30 minutes, or until golden brown and it sounds hollow when tapped.
