Prepare Your Quinoa
- Rinse your quinoa under cold water to remove the natural coating that can make it taste bitter.
- In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil over medium-high heat, then reduce to low and cover. Let it simmer for about 15 minutes or until all the broth is absorbed. Fluff with a fork and set aside.
Roast Those Veggies
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or foil.
- In a large bowl, toss the red bell pepper, zucchini, broccoli, and sweet potato with olive oil, salt, pepper, and garlic powder. Spread them out on the baking sheet in a single layer.
- Roast for about 25-30 minutes, flipping halfway through, until caramelized.
Make the Maple Tahini Sauce
- In a bowl, mix tahini, maple syrup, lemon juice, and salt. Add water gradually until you reach the desired consistency.
Assemble Your Bowl
- In a large bowl or plate, start with a generous portion of quinoa. Top with roasted veggies and drizzle with maple tahini sauce.
