For the Toppings
  • 1 pint fresh strawberries, hulled and halved
  • 2 tablespoons honey or maple syrup Use maple syrup for a vegan option.
  • 1 cup ricotta cheese
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • Optional toppings: fresh mint, crushed nuts, or a sprinkle of cinnamon Customize to your taste.

Method

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Place your halved strawberries on a baking sheet lined with parchment paper. Drizzle them with honey (or maple syrup) and gently toss. Roast for about 15-20 minutes, or until they’re juicy and caramelized.
  3. In a bowl, combine the ricotta cheese, vanilla extract, and a pinch of salt. Whisk or use an electric mixer until smooth and creamy.
  4. While the strawberries are roasting, toast your bread slices until golden and crusty.
Assembly
  1. Spread a generous layer of the whipped ricotta onto the toasted bread.
  2. Top it with the roasted strawberries and any optional toppings you desire.
  3. Enjoy your delicious masterpiece while it’s warm!

Notes

The fluffiness of the whipped ricotta elevates this dish. You can roast other fruits like peaches or blueberries. Meal prep by roasting a larger batch of strawberries for later use.
