Preparation
- Preheat your oven to 450°F (232°C).
- Roast the garlic: Slice the top off the bulb of garlic, drizzle with olive oil, wrap it in foil, and pop it in the oven for about 30-35 minutes until golden and soft.
- While the garlic is roasting, heat a bit of olive oil in a pan over medium heat, add the spinach, and cook just until wilted. Season with salt and pepper, then set aside.
- Once the garlic is done and cooled slightly, squeeze the softened cloves into a bowl, mix in the ricotta cheese, and season with salt and pepper to taste.
Assembly and Baking
- Roll out your pizza crust on a baking sheet. Spread the ricotta mixture evenly over the crust, top with sautéed spinach, and sprinkle with both mozzarella and Parmesan cheese.
- Bake for about 12-15 minutes or until the cheese is bubbling and golden. If you like extra crunch, turn on the broiler for the last minute, but keep an eye on it to avoid burning.
- Once out of the oven, sprinkle some red pepper flakes on top if desired.
Notes
You can substitute ricotta cheese with cream cheese or cottage cheese if necessary. If using frozen spinach, ensure it is thawed and drained. Leftover garlic can be spread on toast for a side dish. This pizza makes great leftovers.
