Ingredients
  

For the Dip
  • 1 head head of garlic
  • 1 cup cherry tomatoes or any tomatoes available
  • 1 cup cream cheese or Greek yogurt for a healthier option
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon olive oil
  • to taste salt
  • to taste pepper
  • for garnish fresh basil optional, for presentation

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Slice the top off the head of garlic, drizzle olive oil over it, sprinkle with salt, and wrap it in aluminum foil. Roast it in the oven for about 30-35 minutes until soft and caramelized.
  3. While the garlic is roasting, wash and slice the cherry tomatoes in half. Toss them with a sprinkle of salt and pepper in a bowl.
Mixing and Baking
  1. In a mixing bowl, mash together the cream cheese, the roasted garlic (squeezed out), and shredded mozzarella until well-combined.
  2. Spread the creamy mixture into a baking dish and layer the halved tomatoes on top.
  3. Bake in the oven for 20-25 minutes or until bubbly and golden.
Serving
  1. Let it cool slightly, garnish with fresh basil if desired, and serve with crackers, toasted baguette, or veggies.

Notes

Roasting the garlic enhances the flavor significantly. You can add leftover cooked vegetables or varieties of cheese as well. If there are leftovers, store them in an airtight container for up to three days and reheat before serving.
