Ingredients
  

Flatbread Ingredients
  • 1 piece prebaked flatbread Store-bought or homemade
Cranberry Topping
  • 1 cup fresh cranberries
  • 4 oz goat cheese, crumbled Can be substituted with feta or ricotta
  • 1 tbsp olive oil
  • 1 tbsp honey Add extra for drizzling if desired
  • 1 tsp balsamic vinegar
  • Salt and pepper, to taste
  • Fresh thyme or rosemary, for garnish Or any preferred fresh herbs

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. On a baking sheet, toss the fresh cranberries with olive oil, honey, balsamic vinegar, salt, and pepper. Spread in a single layer and roast for about 15 minutes.
  3. While cranberries roast, place the flatbread on a baking sheet.
  4. Remove cranberries from the oven once they start to burst and cool for a minute.
Assembling and Baking
  1. Sprinkle the crumbled goat cheese over the flatbread.
  2. Artfully scatter the roasted cranberries on top and drizzle with additional honey if desired.
  3. Bake in the oven for another 10-12 minutes, until cheese is warm and lightly golden.
  4. Remove from the oven, garnish with fresh herbs, cut into pieces, and serve.

Notes

You can roast cranberries in advance and assemble the flatbread right before baking. Leftovers can be stored in an airtight container in the refrigerator for up to three days. Reheat in the oven to restore crispness.
