Ingredients
  

For the Roasted Carrots
  • 1 pound baby carrots (or regular carrots, peeled and cut into sticks) Regular carrots can be substituted if preferred.
  • 2 tablespoons olive oil
  • 1 teaspoon honey (optional for a touch of sweetness) Can be omitted if not desired.
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder Enhances flavor.
For the Whipped Feta Dip
  • 4 ounces feta cheese, crumbled
  • 2 tablespoons Greek yogurt (or sour cream if you dare to be adventurous!)
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • to taste Fresh herbs for garnish (like parsley or dill, if you’re feeling fancy)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss together the baby carrots (or carrot sticks), olive oil, honey, salt, pepper, and garlic powder until they're well coated.
Roasting the Carrots
  1. Spread the carrots in a single layer on a parchment-lined baking sheet and roast in the preheated oven for about 25-30 minutes, turning halfway through.
Making the Whipped Feta Dip
  1. In a food processor, combine the crumbled feta, Greek yogurt, olive oil, lemon juice, and a pinch of salt. Blend until smooth and creamy.
Serving
  1. Once the roasted carrots are caramelized, plate them with a dollop of the whipped feta dip. Garnish with fresh herbs.

Notes

Feel free to substitute regular carrots for baby carrots, just cut them into uniform sizes. Consider adding chili flakes for a spicy kick! Goat cheese can be used as a substitute for feta if needed.
