Preparation

Roasting

Whipping Feta Dip
- While the carrots are roasting, combine feta cheese, Greek yogurt, lemon juice, and honey in a food processor.
- Blend until smooth and creamy.
Serving
- Once the carrots are cool enough to handle, place them on a serving platter alongside the whipped feta dip.
- Drizzle olive oil over the top and sprinkle with fresh herbs.
Notes
Using a variety of carrots adds visual appeal. For a kick, add chili flakes to the whipped feta dip. Leftovers can be used in salads or wraps.
