For the Roasted Carrots

  • 2 tablespoons olive oil

For the Whipped Feta Dip
  • 4 ounces feta cheese
  • 2 tablespoons Greek yogurt Can be substituted with sour cream or cashew cream.
  • 1 tablespoon lemon juice
  • 1 teaspoon honey For a touch of sweetness.
  • Fresh herbs (like dill or parsley) For garnish.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Wash and peel the carrots, then slice them into even sticks.
  3. Toss the carrot sticks with olive oil, salt, and pepper until well coated.
Roasting
  1. Spread the carrots out on a baking sheet in a single layer.
  2. Roast them in the oven for about 25-30 minutes, or until tender and starting to caramelize.
Whipping Feta Dip
  1. While the carrots are roasting, combine feta cheese, Greek yogurt, lemon juice, and honey in a food processor.
  2. Blend until smooth and creamy.
Serving
  1. Once the carrots are cool enough to handle, place them on a serving platter alongside the whipped feta dip.
  2. Drizzle olive oil over the top and sprinkle with fresh herbs.

Notes

Using a variety of carrots adds visual appeal. For a kick, add chili flakes to the whipped feta dip. Leftovers can be used in salads or wraps.
