Ingredients
  

For the Carrots
  • 1 pound carrots (baby carrots or regular ones cut into sticks)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
For the Maple Ricotta
  • 1 cup ricotta cheese
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
For the Spiced Butter
  • 3 tablespoons unsalted butter
  • 1/2 teaspoon cinnamon Feel free to sprinkle more for spice lovers
  • 1/4 teaspoon cayenne pepper Optional for a little kick
Garnish
  • Chopped fresh parsley For garnish

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Wash and trim your carrots, and cut them into even sticks if using regular ones.
Roasting the Carrots
  1. Toss the carrots with olive oil, salt, and pepper in a large bowl until coated. Spread them in a single layer on a baking sheet and roast for about 20-25 minutes, flipping halfway through.
Maple Ricotta Preparation
  1. Mix ricotta cheese, maple syrup, and vanilla extract in a bowl until smooth.
Spiced Butter Preparation
  1. In a small saucepan, melt the butter over medium heat. Add the cinnamon and cayenne, stirring well. Simmer for about 2-3 minutes until fragrant.
Serving
  1. Plate the roasted carrots, dollop the maple ricotta on top, and drizzle with spiced butter. Garnish with chopped parsley.

Notes

Don’t skimp on roasting time for maximum caramelization. Feel free to experiment with other spices in the butter such as nutmeg or allspice. Leftovers can be added to salads or pasta dishes.
