  • 1 pound Brussels sprouts Fresh, trimmed and cleaned
  • 6 slices bacon, diced Cooked until crispy
  • 1/2 cup blue cheese, crumbled For topping
Seasoning and Drizzle
  • 2 tablespoons olive oil For mixing

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Rinse the Brussels sprouts under cold water, trim the ends and cut any larger sprouts in half.
  3. In a skillet over medium heat, cook the diced bacon until crispy.
  4. In a large bowl, combine the trimmed Brussels sprouts with the crispy bacon and drizzle with olive oil. Season with salt and pepper, and toss everything together.
Cooking
  1. Spread the Brussels sprout mixture onto a baking sheet in a single layer. Roast for about 20-25 minutes or until golden brown and crispy, stirring halfway through.
  2. Remove from the oven and sprinkle the blue cheese on top. Let sit for a couple of minutes to avoid burns.
Serving
  1. Transfer the roasted Brussels sprouts to a serving dish, optionally sprinkle with fresh parsley, and serve.

Notes

For best results, use fresh Brussels sprouts. Frozen can be used if necessary, but ensure they are thawed before cooking. Customize the cheese to taste, swapping blue cheese for feta for a milder flavor.
