  • 1 lb Brussels sprouts, trimmed and halved Fresh Brussels sprouts work best.
  • 4 slices bacon, chopped Regular or turkey bacon can be used.
  • ½ cup blue cheese, crumbled Feta or goat cheese can be used as substitutes.
  • 2 tablespoons olive oil Extra virgin olive oil is recommended.
  • to taste none Salt and pepper Adjust according to preference.
  • a dash none garlic powder Optional, but adds a nice flavor.

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the halved Brussels sprouts with olive oil, salt, pepper, and garlic powder.
  3. Stir in the chopped bacon.
Cooking
  1. Spread the Brussels sprouts mixture on a baking sheet in a single layer.
  2. Roast for 20-25 minutes, shaking the pan halfway through.
  3. When the sprouts are almost ready, sprinkle the crumbled blue cheese over the top and return to the oven for an additional 5 minutes.
Serving
  1. Remove from the oven, let cool for a minute, and serve warm.

Notes

For a hint of sweetness, drizzle balsamic glaze right before serving. Store leftovers in an airtight container in the refrigerator for up to 3 days.
